Located ten miles west of Napa on Mt. Veeder, Scully Ranch is a collection of raised bed gardens managed by Rick, our garden curator. Chef Giovanni Guerrera and Rick have been working together to select produce for Uva to be grown from seed in their 20, twenty-five foot raised bed gardens. Rick adheres to the strict codes of organic and sustainable gardening to produce ripe, flavorful and seasonally correct veggies and fruits. Often times, items are picked and delivered the same day they are served, ensuring optimal freshness. Not all veggies used in the Uva kitchen come from Scully Ranch (although Giovanni does try to use organic products when available), but the Ranch’s bounty features prominently on the extensive specials menu, which changes weekly. “We are so fortunate to be able to live in an area that can afford us this luxury”, says Giovanni. “All chefs dream of having access to their own planned garden, and the fact that someone else manages and picks mine is the icing on the cake.” |
